Equipment

  • Whisk or hand mixer
  • Mixing Bowls
  • Parchment Paper
  • Baking tray
  • Cooling Rack
  • Sharp knife

Ingredients

• 2 cups all-purpose flour

• 1 teaspoon baking powder

• 1/4 teaspoon salt

• 2 large eggs

• 3/4 cup sugar

• 1 teaspoon vanilla extract

• 1 cup of whole almonds, raw or pre-toasted

Instructions

1. Set your oven to 180°C (350°F) and prepare a baking tray with parchment paper. This ensures even baking and prevents sticking.

    2. In a bowl, mix flour, baking powder, and salt until well combined. This step builds the base structure of your biscotti dough.

      3. In another bowl, beat eggs, sugar, and vanilla until smooth and slightly fluffy. This adds sweetness and helps bind the ingredients together.

        4. Combine the dry and wet mixtures gently to form a soft dough. Mix just until combined to keep the biscotti light and crunchy.

          5. Fold in the almonds evenly so every slice has a good nutty crunch. This gives the biscotti its signature flavor and texture.

            6. Divide the dough into two logs and place them on the tray. Flatten slightly to ensure even baking throughout.

              7. Bake for 25–30 minutes until the logs turn lightly golden and firm. Let them cool slightly before slicing.

                8. Slice the logs into even pieces using a sharp or serrated knife. Arrange slices flat on the tray for the second bake.

                  9. Bake again for 10–15 minutes, flipping once for even crispness. Cool completely before serving or storing.

                    Notes

                    • Use fresh almonds for the best flavor and crunch in every bite.
                    • Do not overmix the dough, or the biscotti may turn dense.
                    • Slice carefully using a serrated knife for clean, even edges.
                    • Adjust the second baking time based on your preferred crunch level.
                    • Let biscotti cool fully before storing to keep them crisp.
                    • Add chocolate chips or zest for a fun flavor variation.
