Avtar Singh
Baked Feta Dip with Cherry Tomatoes is a warm, creamy appetizer that delivers big flavor with minimal effort. A block of feta is baked until soft and melty, while cherry tomatoes roast until juicy and slightly sweet. Olive oil and garlic tie everything together, creating a rich yet balanced dip. It’s perfect for sharing and tastes amazing with bread, crackers, or fresh veggies.

Ingredients

• 1 block feta cheese (about 8 oz)

• 2 cups cherry tomatoes

• 3–4 garlic cloves, peeled

• 3 tbsp extra virgin olive oil

• ½ tsp black pepper

• ¼ tsp salt (optional, depending on feta)

• ½ tsp dried oregano or thyme

• ¼ tsp chili flakes (optional)

• Fresh basil or parsley, for garnish

• Bread, pita chips, or crackers, for serving

Instructions

1. Preheat oven to 400°F (200°C).

    2. Set the feta block in the center of a small baking dish.

      3. Scatter cherry tomatoes and garlic cloves around it.

        4. Drizzle with olive oil and season with pepper, oregano, and chili flakes.

          5. Bake for 25–30 minutes, until feta is soft and golden, and tomatoes are blistered.

            6. Once done, remove from the oven and let it cool slightly for 5 minutes.

              7. Use a fork to gently mash the feta and tomatoes together until smooth and creamy.

                8. Garnish with fresh herbs and a drizzle of olive oil.

                  9. Serve warm with bread, pita chips, or crackers.

                    Notes

                    • Use a block of feta, not crumbled, for the best texture.
                    • High-quality olive oil makes all the difference — it enhances flavor and richness.
                    • Let the dip sit for a few minutes before mixing—it’ll thicken slightly as it rests.
                    • For a spicy kick, add chili flakes or a touch of hot honey.
                    • You can repurpose the leftovers as a tasty sandwich spread or a creamy pasta sauce.
                    • Ripe cherry tomatoes roast best — they’re juicy and slightly sweet.
                    • Drizzle a little balsamic glaze or honey on top before serving to add an extra burst of flavor.
