Ingredients
  

For the Pie Crust

• 2½ cups all-purpose flour

• 1 teaspoon salt

• 1 cup cold butter, cubed

• 6–8 tablespoons ice water

For the Filling

• 4 cups sliced fresh peaches

• 2 cups fresh blueberries

• ¾ cup granulated sugar

• 3 tablespoons cornstarch

• 1 tablespoon lemon juice

• 1 teaspoon lemon zest

• ½ teaspoon cinnamon

• 1 teaspoon vanilla extract

• Pinch of salt

For the Topping

• 1 beaten egg

• 1 tablespoon coarse sugar (optional)

Instructions
 

1. Mix flour and salt thoroughly in a large mixing bowl.

    2. Cut cold butter into flour until a crumbly texture forms evenly throughout.

      3. Add ice water slowly until the soft dough comes together nicely inside.

        4. Wrap the dough carefully and chill for thirty minutes before rolling it completely afterward.

          5. Combine peaches, blueberries, sugar, cornstarch, and lemon juice in a bowl gently.

            6. Add lemon zest, cinnamon, vanilla, and salt to the fruit mixture.

              7. Roll the dough evenly and place it into the prepared pie dish.

                8. Spread the fruit filling evenly across the bottom pie crust.

                  9. Add top crust or lattice strips over the fruity filling beautifully together.

                    10. Brush egg wash lightly across the crust after sealing the edges.

                      11. Bake the pie at 400 degrees Fahrenheit for fifty minutes until golden brown.

                        12. Cool pie completely before slicing for cleaner, fruitier dessert servings afterward.
