Equipment

  • Baking sheet
  • Mixing Bowls
  • Pastry cutter or fork
  • Measuring Cups and Spoons
  • Parchment Paper

Ingredients

• 2 cups all-purpose flour

• 1/3 cup granulated sugar

• 1 tablespoon baking powder

• 1/2 teaspoon salt

• 1/2 cup cold unsalted butter

• 1/2 cup fresh blueberries

• 1/2 cup heavy cream

• 1 large egg

• 1 teaspoon vanilla extract

• 1 tablespoon milk for brushing

Instructions

1. Preheat your oven to 400°F and prepare a baking tray.

    2. Use parchment paper on the tray for quick, easy cleanup.

      3. Mix flour, sugar, baking powder, and salt in a large bowl.

        4. Add cold butter and mix until a crumb-like texture appears evenly.

          5. Whisk cream, egg, and vanilla in another small mixing bowl.

            6. Pour the wet mixture slowly into the prepared flour mixture carefully.

              7. Add blueberries carefully without smashing them into the soft dough.

                8. Shape the dough into a thick circle on a lightly floured surface.

                  9. Use a knife to carefully cut the dough into eight wedges.

                    10. Place scones onto the tray with small spaces between each piece.

                      11. Brush tops lightly using milk for a beautiful golden baked color.

                        12. Bake the scones until golden tops and lightly crisp edges appear.

                          13. Cool slightly before serving warm with butter or a sweet glaze.

                            Notes

                            • Always use cold butter for flaky and tender homemade scones.
                            • Do not overmix, or the scones may turn heavy and dense.
                            • Chill the dough before baking for a flaky, tender scone texture.
                            • Fresh blueberries give a cleaner texture and brighter flavor during baking.
                            • Measure flour carefully to prevent dry, crumbly baked scones later.
                            • Airtight containers help leftover scones stay fresh for several days.
