Ingredients
  

• 4 cups cauliflower florets, chopped small

• 1 small cucumber, diced evenly

• 1 small red onion, thinly sliced

• 1 bell pepper, chopped finely

• 1 cup cherry tomatoes, halved

• 2 tablespoons fresh parsley, chopped

• 2 tablespoons olive oil

• 1 tablespoon lemon juice

• 1 garlic clove, minced finely

• ½ teaspoon salt

• ¼ teaspoon black pepper

• 1 teaspoon mustard or honey, optional

Instructions
 

1. Wash fresh cauliflower carefully and cut into evenly sized small florets.

    2. Chop the cucumber, bell pepper, onion, and tomatoes into evenly sized fresh pieces.

      3. Blanch the cauliflower briefly if you prefer a softer and milder salad texture.

        4. Mix olive oil, lemon juice, garlic, salt, and pepper until completely smooth.

          5. Add cauliflower and chopped vegetables into a large clean mixing bowl.

            6. Pour dressing over vegetables and toss gently until evenly coated.

              7. Cool the salad shortly before serving for extra freshness and crunch.
