Ingredients
  

• 2 medium tomatoes, chopped

• 2 Chipotle peppers in adobo

• 1 small onion, chopped

• 2 garlic cloves

• 1 small handful of cilantro

• Juice of 1 lime

• Salt to taste

• 1 to 2 tablespoons adobo sauce

• Optional: 1 roasted tomato, one jalapeño, one teaspoon honey, or a few tomatillos

Instructions
 

1. Rinse and chop the tomatoes, onion, and cilantro. Peel the garlic.

    2. Add the tomatoes, onion, garlic, cilantro, chipotle peppers, adobo sauce, lime juice, and salt to a blender.

      3. Puree until smooth, or leave it slightly chunky for added texture.

        4. Taste and adjust lime, salt, or heat.

          5. Chill the salsa for 30 minutes to deepen the taste.

            6. Serve with chips, tacos, bowls, or grilled dishes.

              Notes

              • Use just one chipotle pepper to keep the heat mild.
              • Add a splash of water to thin the salsa if needed.
              • Roasted tomatoes add burly smoky depth.
              • Canned tomatoes make blending smoother.
              • Place any remaining portion in an airtight container to preserve its flavor.
              • The flavor becomes richer after refrigeration.
