• 2 cans of white cannellini beans (15 oz each)

• 1 cup heavy whipping cream

• 3 cloves fresh garlic, chopped fine

• 1 medium yellow onion, diced small

• 2 tablespoons olive oil

• 3 cups fresh baby spinach leaves

• 1 teaspoon dried Italian seasoning

• 1/2 teaspoon salt (or to taste)

• 1/4 teaspoon black pepper

• 1/4 teaspoon red pepper flakes (optional)

• 2 tablespoons fresh parsley, chopped

• 1/2 cup sun-dried tomatoes, chopped

• 1/4 cup grated Parmesan cheese

• 1 tablespoon fresh lemon juice

• 2 strips cooked bacon, crumbled

Instructions
 

1. Drain and rinse canned beans thoroughly in a colander, then set aside.

    2. Cut the onion into tiny pieces and finely grate the garlic.

      3. Wash fresh spinach leaves and pat them dry.

        4. Warm olive oil in a large skillet set over medium heat.

          5. Sauté diced onions until translucent and slightly golden.

            6. Combine the finely chopped garlic into the pan and heat until its fragrance is released (approximately 30 seconds).

              7. Stir in drained beans and your preferred seasonings.

                8. Heat the bean mixture through while stirring occasionally.

                  9. Gradually add the cream in a steady stream, stirring constantly.

                    10. Stir frequently on low heat to prevent curdling as it thickens.

                      11. Layer fresh spinach leaves on top and let them wilt slightly.

                        12. Gently fold the wilted spinach into the creamy beans.

                          13. Move the skillet burner from the heat and taste, adjusting flavors as needed.

                            14. Add fresh herb leaves and cracked pepper as the perfect garnish.

                              15. Serve immediately with crusty bread or overcooked pasta.
