Ingredients
  

• 1 cup French green lentils

• 3 cups water

• 1 small red onion, chopped

• 1 cup cherry tomatoes, halved

• 1 cucumber, diced

• ¼ cup fresh parsley, chopped

• 3 tbsp olive oil

• 1½ tbsp red wine vinegar

• 1 tsp Dijon mustard

• Salt to taste

• Black pepper to taste

Instructions
 

1. Rinse the lentils and cook them in water until they are tender yet firm.

    2. Drain and let cool slightly.

      3. Chop vegetables and herbs.

        4. Whisk olive oil, vinegar, mustard, salt, and pepper.

          5. Combine lentils and vegetables.

            6. Add dressing and toss gently.

              7. Rest for 15 minutes before serving.

                Notes

                • Do not overcook lentils.
                • Season while warm.
                • Adjust dressing gradually.
                • Fresh herbs work best.
                • Store in airtight containers.
                • Avoid freezing.
                • Refresh with vinegar before serving.
