Ingredients
  

• 1 cup whole wheat flour or 1 cup of oat flour

• 1 cup fresh or frozen blueberries

• 1/3 cup honey or maple syrup

• 2 eggs

• 1/2 cup yogurt or milk

• 1/4 cup olive oil or liquid coconut oil

• 1 teaspoon baking powder

• 1/2 teaspoon baking soda

• 1 teaspoon vanilla extract

• A small pinch of salt

Instructions
 

1. Prepare the Oven and Tray: Preheat the oven and line or lightly grease a muffin tray to prevent sticking and ensure easy removal.

    2. Combine Dry Ingredients: In a mixing bowl, stir together the flour, baking powder, baking soda, and salt until evenly blended.

      3. Mix Wet Ingredients: In another bowl, whisk the eggs, sweetener, yogurt or milk, oil, and vanilla until the mixture looks smooth.

        4. Make the Batter: Gently fold the wet mixture into the dry ingredients until just combined to keep the muffins soft.

          5. Add Blueberries- Carefully fold in the blueberries so they spread evenly and create fruity bites throughout the batter.

            6. Fill and Bake- Spoon the batter into the tray and bake until the muffins rise well and turn lightly golden on top.

              7. Cool and Serve: Allow the muffins to cool slightly before serving to improve texture and flavor.
