Ingredients

• 1 cup whole wheat flour or rolled oats

• 1/2 teaspoon baking powder

• 1/4 teaspoon baking soda

• 1/2 teaspoon cinnamon (optional)

• 1 ripe banana (mashed) or 1/2 cup applesauce

• 1/4 cup honey or maple syrup

• 1/4 cup coconut oil or melted butter

• 1 teaspoon vanilla extract

• 2–3 tablespoons chocolate chips (optional)

• 2 tablespoons chopped nuts or raisins (optional)

Instructions

1. Preheat the oven to 180°C and line a baking tray with parchment paper to prevent sticking.

    2. In a bowl, mix flour or oats with baking powder, baking soda, and cinnamon until evenly combined.

      3. In another bowl, mash the banana smoothly and mix in honey, oil, and vanilla extract until well blended.

        4. Gradually add the dry mixture into the wet mixture and stir until a soft dough forms.

          5. Scoop small portions of dough, place them on the tray, and gently flatten each cookie.

            6. Bake for about 10–12 minutes or until the cookies turn lightly golden and firm on the edges.

              7. Let the cookies cool on the tray for a few minutes before serving for the best texture.

                Notes

                • Use ripe bananas for natural sweetness, as they boost flavor and reduce the need for added sugar.
                • Avoid overmixing the dough, as it can make the cookies dense instead of soft and tender.
                • Slightly underbake the cookies to keep them soft and chewy, which kids usually prefer.
                • You can adjust the sweetness to your taste by adding more or less honey or maple syrup.
                • Store cookies in an airtight container to maintain freshness and prevent them from drying out.
                • Let the cookies cool completely before storing, as this helps them set properly and keeps the texture perfect.
