Ingredients
  

• 2 large cucumbers, thinly sliced

• ¼ cup thinly sliced red onion

• 2 tablespoons chopped fresh dill

• 2 tablespoons olive oil

• 1 tablespoon lemon juice or vinegar

• ½ teaspoon salt

• ¼ teaspoon black pepper

• 1 tsp of honey or maple syrup, if desired.

Instructions
 

1. Wash cucumbers well and slice them thinly for even texture.

    2. Place cucumbers and onions in a large mixing bowl.

      3. In a small bowl, whisk olive oil, lemon juice, salt, pepper, and sweetener.

        4. Add the dressing across the cucumber pieces and softly combine to spread it evenly throughout.

          5. Sprinkle fresh herbs on top and mix lightly.

            6. Chill in the refrigerator for at least 20 minutes before serving.

              • Use seedless cucumbers for less moisture.
              • Allow the salad to cool in the refrigerator for some time before serving to enhance its flavor.
