Ingredients
  

• 1 ½ cups almond flour

• ¼ cup coconut flour

• 2 teaspoons baking powder

• 2 teaspoons pumpkin spice

• ¼ teaspoon salt

• ½ cup keto sweetener

• 1 cup pumpkin puree

• 3 large eggs

• ¼ cup melted butter or coconut oil

• 1 teaspoon vanilla extract

• ¼ cup unsweetened almond milk

Instructions
 

1. Preheat the oven to 350°F and prepare a lined muffin pan.

    2. In a bowl, mix almond flour, coconut flour, baking powder, pumpkin spice, salt, and sweetener.

      3. In another bowl, whisk pumpkin puree, eggs, melted butter, vanilla, and almond milk.

        4. Mix the wet and dry ingredients until the batter becomes smooth.

          5. Fill muffin cups evenly with batter.

            6. Let the muffins bake for 20–25 minutes, and remove them once a toothpick inserted in the center comes out clean.

              7. Allow muffins to cool before serving.

                Notes

                • Always use pure pumpkin puree.
                • Avoid over-mixing the batter.
                • Leave the muffins in the pan until they cool a bit before lifting them out.
                • Add chocolate chips for extra flavor.
                • Store in an airtight container.
                • Freeze for longer storage.
                • Reheat briefly before serving.
