Quick Chana Masala

Quick Chana Masala is a fast and tasty chickpea curry. This quick version uses convenient canned chickpeas, ripe tomatoes, and basic pantry spices. This dish is perfect for busy days when you want something healthy and filling. Serve it over rice or with fresh Indian breads for a meal that truly satisfies.

Ingredients
  

• 1 can of chickpeas (400g), drained and rinsed

• 1 onion, chopped

• 2 tomatoes, chopped or puréed

• 3 garlic cloves, minced

• 1-inch ginger, grated

• 2 tbsp oil

• 1 tsp cumin seeds

• 1 tsp coriander powder

• ½ tsp turmeric

• ½ tsp red chili powder (or to taste)

• 1 tsp garam masala

• Salt to taste

• ½ cup water

• Optional: amchur powder, cilantro, green chili, lemon juice

Instructions
 

1. Chop onions and tomatoes, mince the garlic, and grate ginger.

    2. Rinse canned chickpeas and drain well.

      3. Add cumin seeds to hot oil and cook until they begin to pop.

        4. Add the onions and sauté until golden brown.

          5. Add ginger and garlic and cook for a minute or two until nicely fragrant.

            6. Add coriander powder, turmeric, chili powder, and salt. Mix well.

              7. Add tomatoes (chopped or puréed) and cook until the oil separates, stirring often.

                8. Add chickpeas and mix with the masala.

                  9. Add between ½ and 1 cup of water, stirring well, and simmer for 10–12 minutes.

                    10. Lightly mash a few chickpeas if you prefer a thicker gravy.

                      11. Stir in garam masala.

                        12. Garnish with cilantro and add lemon juice for extra tang.

                          • Use canned chickpeas to save time.
                          • Adjust the spice to your taste.
                          • Simmer for better flavor.
                          • Add greens for a healthy version.
                          • Store leftovers in the refrigerator or freeze.
