Ingredients
  

For the Crust

• 1½ cups of finely crushed graham crackers

• ½ cup melted butter

• 2 tablespoons sugar

For the Cheesecake Filling

• 2 cups cream cheese (softened)

• ¾ cup granulated sugar

• 2 large eggs

• 2 tablespoons fresh lemon juice

• 1 tablespoon lemon zest

• 1 teaspoon vanilla extract

For the Raspberry Layer

• Fresh or frozen raspberries – 1½ cups

• 3 tablespoons sugar

• 1 tablespoon cornstarch combined with 2 tablespoons water (optional)

Instructions
 

1. Preheat the oven and line a baking pan with parchment paper.

    2. Mix graham cracker crumbs, sugar, and melted butter, then press firmly into the pan and bake until lightly golden.

      3. Beat the cream cheese until smooth, add the sugar, then mix in the eggs one at a time, followed by lemon juice, zest, and vanilla.

        4. Cook raspberries with sugar until soft, then add cornstarch slurry if needed and let it cool slightly.

          5. Pour the cheesecake filling over the crust, spoon the raspberry mixture on top, and gently swirl.

            6. Bake until the center is just set and slightly wobbly, then cool at room temperature.

              7. Refrigerate until fully chilled, then slice into neat bars and serve.

                Notes

                • Always use room temperature cream cheese for a smooth filling.
                • Do not overmix the batter, as it can cause cracks to form on the surface.
                • Fresh lemon juice gives the best flavor and brightness.
                • Let the bars cool completely before refrigerating.
                • Chill for several hours to get clean slices.
