Ingredients
  

• 2 medium sweet potatoes (peeled and grated)

• 1 small onion, optional

• 1 egg or flax egg

• 2 tbsp flour (any type)

• 1/2 tsp garlic powder

• 1/2 tsp smoked paprika

• Salt and pepper to taste

• 2 tbsp oil for frying

Instructions
 

1. Grate the sweet potatoes and onion. Use a clean towel to soak up the remaining moisture.

    2. Add them to a bowl with egg, flour, and seasonings. Stir everything together well.

      3. Take small portions of the mixture and shape them into even patties.

        4. Heat a little oil in a skillet over medium heat. Cook the patties for 3–4 minutes per side.

          5. Cook the patties for 3–4 minutes per side. They should be crisp and golden.

            6. Alternatively, bake at 400°F for 20 -25 minutes or air fry at 375°F for 10 -12 minutes.

              Notes

              • Make it vegan with a flax egg.
              • Add a little cheese or fresh herbs to enhance the overall flavor.
              • Serve with eggs, dips, or in wraps.
              • Keep the mixture chilled for a better shape.
              • Squeeze sweet potatoes well to avoid sogginess.
              • Use gluten-free flour to make it allergy-friendly.
