Ingredients
  

• 2 medium sweet potatoes (peeled and grated)

• 1 small onion, optional

• 1 egg or flax egg

• 2 tbsp flour (any type)

• 1/2 tsp garlic powder

• 1/2 tsp smoked paprika

• Salt and pepper to taste

• 2 tbsp oil for frying

Instructions
 

1. Grate sweet potatoes and onion. Squeeze out all excess moisture.

    2. Mix in a bowl with egg, flour, and seasonings.

      3. Form into small patties.

        4. Add oil to a skillet and heat it over medium heat.

          5. Cook both sides for about 3–4 minutes until crisp and nicely golden.

            6. Alternatively, bake at 400°F for 20-25 minutes or air fry at 375°F for 10-12 minutes.

              Notes

              • Make it vegan with a flax egg.
              • Add cheese or herbs for more flavor.
              • Serve with eggs, dips, or in wraps.
              • Keep the mixture chilled for a better shape.
              • Squeeze sweet potatoes well to avoid sogginess.
