Ingredients
  

• 1 medium sweet potato (about 1 cup roasted and mashed)

• 1 cup cooked chickpeas

• 2 tablespoons tahini

• 1 tablespoon olive oil

• 1 tablespoon fresh lemon juice

• 1 garlic clove

• ½ teaspoon ground cumin

• ¼ teaspoon paprika

• ½ teaspoon salt

• 2–3 tablespoons cold water (as needed)

Instructions
 

1. Roast the sweet potato at 400°F (200°C) until soft, then let it cool slightly.

    2. Add the roasted sweet potato, chickpeas, tahini, garlic, olive oil, and lemon juice to a blender or food processor.

      3. Add cumin, paprika, and salt, then blend until smooth and creamy.

        4. Add cold water, one tablespoon at a time, to adjust the texture to your desired consistency.

          5. Blend again until silky smooth, then transfer to a serving bowl.

            6. Drizzle with olive oil and sprinkle with paprika before serving.

              Notes

              • Roasting gives the hummus a richer flavor.
              • Fresh lemon juice gives the best flavor, so use it whenever possible.
              • Use extra garlic if you prefer a richer, more pronounced flavor.
              • Chill before serving for a better texture.
              • Store in an airtight container.
              • Use within 4–5 days.
              • Serve with pita, crackers, or veggies.
