Ingredients
  

• 1 ½ cups all-purpose flour

• 1 teaspoon baking soda

• 1 teaspoon ground cinnamon

• ¼ teaspoon ground nutmeg

• ¼ teaspoon salt

• ¾ cup brown sugar

• ⅓ cup melted coconut oil or vegan butter

• 1 teaspoon vanilla extract

• 3 tablespoons plant-based milk

• 1 cup freshly grated carrots

• ¼ cup chopped walnuts or pecans

• ¼ cup raisins

• ¼ cup vegan white chocolate chips (optional)

Instructions
 

1. Preheat your oven to 350°F and line a baking tray with parchment paper.

    2. Add flour, baking soda, cinnamon, nutmeg, and salt into a large mixing bowl. Stir well until everything combines evenly.

      3. In another bowl, whisk brown sugar, melted coconut oil, vanilla extract, and plant-based milk until smooth and creamy.

        4. Slowly combine the dry and wet ingredients using a spatula. Mix only until the cookie dough comes together evenly.

          5. Carefully mix grated carrots, walnuts, raisins, and vegan chocolate chips into the dough. Stir gently without overmixing the cookie mixture.

            6. Scoop equal-sized dough portions onto the baking tray, leaving space between each cookie.

              7. Bake for 10–12 minutes until the edges are lightly golden and firm.

                8. Remove the tray from the oven and let the cookies cool completely before serving them fresh.
