Ingredients
  

• 2 cups cooked chickpeas

• ½ cup diced cucumber

• ½ cup diced celery

• ¼ cup finely chopped red onion

• ¼ cup chopped parsley

• 2 tablespoons olive oil

• 1 tablespoon lemon juice

• 1 teaspoon Dijon mustard

• 1 clove garlic (minced)

• Salt to taste

• Black pepper to taste

Optional

• ½ avocado diced

• ¼ cup cherry tomatoes

• 2 tablespoons vegan mayonnaise

• pinch red pepper flakes

Instructions
 

1. Drain and rinse the chickpeas well.

    2. Transfer them to a mixing bowl and gently press a few with a fork.

      3. Add diced cucumber, celery, onion, and parsley.

        4. In a small bowl, whisk olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper.

          5. Pour the dressing over the salad.

            6. Mix everything gently until well combined.

              7. Taste and adjust seasoning if needed.

                8. Serve immediately or refrigerate for later.

                  • Using fresh lemon juice helps bring out the best flavor in the dish.
                  • Do not over-mash the chickpeas.
                  • Chill the salad for a deeper flavor.
