Ingredients
  

• 1 cup red lentils, rinsed well

• 1 tablespoon oil

• 1 medium onion, finely chopped

• 3 garlic cloves, minced

• 1 tablespoon fresh ginger, grated

• 2 medium tomatoes, chopped

• 1 cup coconut milk

• 3 cups vegetable broth or water

• 1 teaspoon curry powder

• ½ teaspoon turmeric powder

• 1 teaspoon ground cumin

• 1 teaspoon ground coriander

• ¼ teaspoon red chili flakes

• Salt and black pepper, according to taste

• 1 cup spinach leaves

• Fresh cilantro and lime wedges for garnish

Instructions
 

1. Heat oil in a large pot and cook onions until soft and lightly golden.

    2. Add fresh garlic and ginger, then sauté gently until aromatic and fragrant.

      3. Stir in curry powder, turmeric, cumin, coriander, and chili flakes for deeper flavor.

        4. Cook chopped tomatoes gently until softened and naturally thickened inside the pot.

          5. Pour in coconut milk and vegetable broth, then stir everything together carefully.

            6. Add rinsed red lentils and stir evenly into the flavorful curry mixture.

              7. Simmer the lentils until soft, creamy, and fully cooked throughout.

                8. Stir in spinach leaves and cook briefly until wilted and fresh-looking for serving.

                  9. Check the curry flavor and adjust seasonings or spice levels if necessary.

                    10. Serve warm with rice, naan, or quinoa, then garnish with cilantro and lime.
