Ingredients
  

• 8 small tortillas (corn or flour)

• 1 cup black beans or refried beans (mashed)

• 1/2 cup corn (boiled or frozen)

• 1/2 cup chopped bell peppers

• 1/4 cup finely chopped onions

• 1/2 cup grated cheese (optional)

• 1/2 teaspoon cumin powder

• 1/2 teaspoon chili powder

• Salt to taste

• 2 tablespoons oil (for brushing)

Instructions
 

1. Preheat your oven to 200°C (400°F) and line a baking tray.

    2. In a bowl, mix beans, vegetables, cheese, and spices well.

      3. Warm tortillas slightly so they become soft and easy to roll.

        4. Spread a small amount of filling evenly along the edge of each tortilla.

          5. Roll tightly and place seam side down on the baking tray.

            6. Lightly brush oil evenly over each rolled taquito.

              7. Bake for 15–20 minutes until the outside turns golden and crisp.

                8. Serve hot with your favorite dips and enjoy fresh flavors.

                  Notes

                  • Do not overfill tortillas, or they may open during baking.
                  • Always warm tortillas before rolling to prevent cracking issues.
                  • Use fresh vegetables for better taste and texture in the filling.
                  • Flip the taquitos halfway to get even crispiness on both sides.
                  • Adjust the spices to suit your taste, whether you prefer a mild or spicy flavor.
                  • You can skip cheese or use vegan cheese if preferred.
